It's very hard to find this fare on the internet, but a Day Return from York to Saltburn is £10.40. You can't travel via Darlington (you change at Middlesbrough) but it can be purchased with a Family Railcard so I a family of 4 could travel for about £17.

No need to book the ticket in advance, just be prepared to change at Middlesbrough where you will probably have a half hour wait, depending on the time of day.
